Grubbin’ With Grace: Thumbprint Cookies

For this month of Grubbin’ With Grace I decided to put myself first and make my favorite type of cookie. Thumbprint cookies have been my favorite cookie for the past six years and I believe they should be everyone’s favorite cookie. I used a random recipe I found online for this round of my grubbing adventures. The preparation was easy enough for cookies. The part that I didn’t like was that you must let the dough chill for three hours! After letting the dough chill I put it into about 1-inch cubes and pressed my thumb into the center of the dough. I used raspberry jam, but you can use any kind you prefer. You put a teaspoon amount into the middle of the indent and bake the cookies for 13-15 mins. I loved the cookies, 100/10. I very much recommend.

 

Ingredients

Cookies

1 cup of unsalted butter, softened to room temperature

2/3 cup of granulated sugar

1/2 tsp. almond extract

1 tsp. pure vanilla extract

¼ tsp. salt

2 and ¼ cup of all purpose flour

½ cup of raspberry jam

Icing

1 cup of confectioner’s sugar

1-2 tbsp. cream or milk

Optional: 1 tsp. pure vanilla or almond extract
